This single cask of rye whiskey was distilled by Dad’s Hat in Bristol, Pennsylvania. Dad’s Hat is produced the way rye was made before prohibition – a high rye content in the mashbill along with a healthy portion of malted barley and rye malt, with no corn at all. Combine this with a sweet mash fermentation and you've got a rye whiskey that is a far cry from many of the larger brands on the market which are often "barely legal" (51% rye), sour mash whiskies that taste more like bourbon than old school rye.
At seven years old, this is the oldest single barrel ever bottled by Dad’s Hat. We chose this barrel for the intensity of flavor and depth – dried figs and poached pears balance the sharp tannins, and with some time it opens up into a heady cornucopia of sweet spices. This is what rye whisky is capable of when made with careful attention to provenance and production.

Through the 19th Century and up until Prohibition, Pennsylvania rye whiskey was the premier American whiskey. Classic cocktails like the Manhattan, Old Fashioned and Whiskey Sour were originally made with rye whiskey. After suffering during Prohibition, most Pennsylvania distilleries went out of business – few survived into the 1960s and all were gone by the 1980s. Dad’s Hat returned rye whiskey to its historical home in 2011.
