What are the PM Spirits Projects?

The PM Spirits Projects are a lot of things, but at their core they are the essence of what PM Spirits is all about – provenance, tradition, craftsmanship, quality, and individuality. Not just with regards to our products, but also the people who create them. Spirits bottled under this label represent the finest distillates we’ve come across, all of which exist only in very small quantities.

Where do these spirits come from?

France and Scotland.

Why? Well, Nicolas Palazzi – founder and fearless leader of PM Spirits – was raised in Bordeaux, France and spent a lot of time in the Cognac region. There, he met two people who became instrumental in his understanding of Cognac and in establishing his network in the region: one was a good friend of his grandfather and a highly-respected “bouilleur de cru”, or grower-distiller, who gave him his first hands-on approach to working in a cognac cellar.

The other, master cooper Jean-Noel Pelletan, shared his encyclopedic knowledge of ancient techniques and his deep understanding of wood and the role it plays in aging. These men introduced Palazzi to dozens of people throughout the region – distillers, bottlers, negociants, and more. Over the years, several casks and demi-johns of Cognac were acquired from this diverse mix of characters. This became the start of a cellar located in the heart of Charente, which became the foundation for the original incarnation of PM Spirits: an independent bottler of rare Cognacs.

As for the spirits from Scotland; well, sometimes one is presented with the opportunity to acquire a cask of incredible Single Malt Scotch Whisky and it cannot be passed up. And then you purchase a few more casks, and bring those all to your cellar in France to age alongside the aforementioned Cognac. It’s as simple as that, really.

The spirits in these bottles are some of the most singular distillates we’ve had the opportunity to work with. They are an examination of age, wood, and old-school techniques. They highlight the importance of mastering and understanding wood as well as the influence of unique casks on the spirit, while still allowing that spirit to sing.
