Cobrafire
Armagnac has a long tradition of blanche, or unaged, brandy, but no one really paid much attention to it until French expat of NYC’s PM Spirits partnered with Claire de Montesquiou of Domaine d’Espérance in Armagnac. They labeled it with a menacing name, though the spirit is far from threatening: Made from folle blanche and baco, it’s a complex, smooth eau-de-vie with pale notes of white tea and golden plub. Cobrafire has quickly become a favorite among bartenders, who find its stone fruit richness and fores-floor notes add an umami complexity to mixed drinks.
